We’ve had the great pleasure of working closely with Chef Michael Colletti and the rest of the VB3 team these past few months – helping them get ready for their grand opening in Jersey City.  Many designs, photos and pounds later, we’re proud to announce they’re ready to serve you some of the freshest, most delicious food around! Dance Soul Co. performs at Peace Market 2012Here’s a few more of our favorite photos from Peace Market 2012!  This annual night of charity and entertainment is put on by the Youth Leadership Committee of Seeds of Peace, co-chaired by Matt Jung and Grishma Parekh.   Their organization fosters dialog and community between Israelis and Palestinians by sending youths from both countries to a camp together each summer.  This year’s event featured belly dancing, a hummus taste-off with celebrity judges, and a musical performance by Bad Rabbits.

David Cross and Amber Tamblyn signing Moet bottle at Peace Market 2012Here’s a sneak peek of some celebrities and VIPs arriving at Peace Market 2012!  Guests such as David Cross, Amber Tamblyn and Bad Rabbits stopped to pose on the “green” carpet and sign a giant bottle of Moet that was later auctioned off by the charity.  Peace Market was hosted by the Seeds of PeaceYouth Leadership Committee at the Metropolitan Pavilion in NYC on March 1st, 2012.  More photos to come!

We had the pleasure of shooting (and eating) some of Chef Colletti’s amazing dishes today!  Here’s a sneak peak from the VB3 menu:

  • Grilled Lamb Chop with Braised Artichoke, Preserved Lemon Yogurt and Mint
  • Braised Pork Belly with Radicchio Apples and Mustard
  • Free Range Chicken with Fingerling Potatoes, Lemon, Rosemary and House Cured Olives

Chef Michael Colletti of VB3 and Marc M. the owner of Dozzino, put on a one-night-only, culinary extravaganza titled, “Il Legno”.  A fixed four course meal of seasonal fare, with an emphasis on locally grown food delighted the crowd.  …Ample honey-wine and belinis as well!

These mouthwatering shots are from a test shoot with Chef Colletti, in preparation for the amazing culinary book he is publishing in the near future!  The shoot features a Tomato Salad, Artichoke Salad, Froscia, and Pine Nut cake – all of which tasted even better than they look in these photos!

Bigger, faster, stronger

Hanukah’s gone and Christmas has yet to come, but we’re already thinking about the New Year!
